Happy Nappers

Do you have any commercials that just get into your head?  The one that used to always stand out was the "Potty Dance" commercials.  I guess my brain has gotten immuned to that song and it has moved on to the Happy Nappers song.

Have you heard it?  "We are Happy, Happy Nappers and we love to play with you."  It is a sweet little song that gets stuck in my head and I sing it over and over.  Of course, it doesn't help that everytime the commercial comes on Gracie starts saying, "I want the unicorn."

Have you guys seen or heard this commercial?  Do you walk around singing it like I do?  LOL



When Will It Stop?

Today I am so sad.  I am so sick of hearing of tornadoes and deaths and flooding and loss of homes and loss of property. 

Yesterday the Army Corps of Engineers was in the horrible position of choosing whether to break a levee and flood 130,000 acres of prime farmland and flood over 100 homes or do nothing and let the Illinois town of Cairo be wiped out.  They decided to go ahead and breech the levee last night which will create a spillway and flood all of that land.

All of these pics are only from the breech of the levee last night, there are other towns and communities that are flooded, as well.  A secondary levee was breached at Lake Wappapello spilling water over and taking out a highway.

My cousin has lost everything in Morehouse, MO.  Most of these people do not have flood insurance because these towns and communities have never flooded and there has never been a threat of flooding.  I don't think most people even knew that it would be possible to flood since these towns were so far away from the levees and rivers.

I haven't lived down in Southeast Missouri for years and years but all of these little towns are home to me.  Most of my extended family and friends still live down there and they are all be affected:  their homes being flooded, highway passages for them to get back/forth to work are closed, schools are out, and the rain just keeps coming.

My heart is just breaking for all of these people. 

A Recipe: Baked Chicken Taquitos

In honor of Cinco de Mayo, here is a great recipe!

Baked Creamy Chicken Taquitos adapted from Sister's Cafe
1/3 cup (3 oz.) cream cheese
1/4 cup green salsa
1 Tb fresh lime juice (1/2 lime)
1 tsp chili powder
1/2 tsp cumin
1/2 tsp onion powder
1/4 tsp granulated garlic
3 Tb chopped cilantro
2 Tb sliced green onions
2 cups shredded chicken
1 cup grated pepperjack cheese fajita size flour tortillas (or small corn tortillas)
cooking spray
kosher salt

Directions:  Soften cream cheese in microwave for 20-30 seconds. Stir in green salsa, lime juice and spices until well mixed then add cilantro and green onions. Stir in shredded chicken and pepperjack cheese and combine well. **this can be made ahead of time and stored in the fridge.

Preheat oven to 425 degrees.

Line cookie sheet with Silpat (or tin foil, lightly sprayed with cooking oil). Working with 3-4 tortillas at a time, briefly heat in microwave so they are more malleable and easier to work with. (Any time you want to heat up flour tortillas, it's a good idea to place a damp paper towel draped over a small stack of them in the microwave. If I have more than 5, I will place a damp paper towel in the middle of the stack as well.) Spoon 2-3 Tb of mixture in a row across the bottom third of tortilla, keeping 1/2 inch away from edge. This makes it possible to roll it up very tightly.

Place taquitos seam side down on cookie sheet, making sure they are not touching. Lightly spray with cooking spray and sprinkle with kosher salt. Bake for 15-20 minutes or until crisp and edges start to turn golden brown. Serve with your favorite salsa, guacamole, and sour cream.

Modficiations: -For some reason my produce was left off of my shopping list so I did not have cilantro or green onions.

Here's what you'll need:

Preheat oven to 425 degrees.

Since I used frozen chicken breasts, I thawed them and then boiled the chicken.

Put some sour cream in a bowl and pop it in the microwave for 30 seconds.

Add the green salsa, herbs and cheese to the cream cheese and mix.

Pull the chicken out of the pot and shred it.  Add it to the cheese mixture.

Put 3-4 tortillas on a plate and cover with a damp paper towel.  Warm up for about 15 seconds.

Spoon out the chicken and cheese mixture onto the tortilla and roll tightly.

Place on a cookie sheet covered in tin foil.  Spray the tin foil with cooking spray so that the taquitos won't stick.

Lightly spray the taquitos with cooking spray and sprinkle with coarse salt.

Pop into the oven for 15-20 minutes.

Our Thoughts:

These taquitos were so good.  I was really surprised at how much flavor they actually had.  They were creamy with plenty of chicken and just a hint of spice but not too much for little kids.

You could easily make this spicier by adding green chilies or a hotter salsa verde. 

I used frozen chicken breasts but this dish would be even easier by using a pre-cooked rotisierrie chicken.

I have to be honest and tell you that it was hard for me to be happy.  At first.  Of course, I was glad that the world is now rid of this monster but I really felt torn about rejoicing in the death of a soul lost.  I don't know your beliefs but I believe that this man will burn in hell forever and something about rejoicing in that just didn't seem right.

I really had to take a little time and remind myself that just as I have freewill, so did he.

I am glad that the families of the 9-11 attacks, the families of the soldiers who have lost their lives, the families of the soldiers and workers who have gone months without their loved ones, the Americans who were afraid to fly, afraid to drive, afraid to LIVE can now sleep well.  There is less evil in this world tonight and I am happy and grateful.

In OCS (Officer Candidate School) we had to pick a General to study.  Our class chose GEN George S Patton.  He has many quotes but this one came to mind in my moment of weakness earlier:

Weekend Re-Cap

Last week I got a wild hair and decided that we needed to get a new car.  So, Friday night I decided to get the show on the road and try to get a new family car.  I loved my cute Mercedes but ever since Caleb's arrival I reall never got to drive it anyway.  It couldn't hold 3 kids so I had to take over Scott's old work car and this became his.

I was sad to get rid of it but it just wasn't feasible for our current situation.  Now he can take back our old family car and this new one will be mine.

Go see my friend, Linda, at Weber Chevrolet.  She was awesome!  I got a brand new silver Chevy Traverse.

I've only had it for a couple of days but so far, I love it.

Saturday morning I ran a 5K at Kanin's school.  My time was 33:03.  It is a tough course as every way we go there are hills but I was really happy with my time.  It has rained almost everyday here for weeks and I have only been able to run a couple of times in the last month. 

Saturday afternoon Scott and I were able to golf for the first time this year.  Scott's brother and sister-in-law belong to a country club and each month they have couples golf.  I am not a good golfer and don't play enough to get any better but I love being out there. 

Don't you just love my John Daly-ish pants?  Yes, they are obnoxious but so cute at the same time.

Today we got up and helped my parents move into their new house. It was also my Dad's birthday so I'd say that getting a new house is a pretty good birthday present.
